Binging with Babish: Tamales from Coco

  • Pixar's latest laser-guided annihilator of heartstrings, Coco, starts off in the sunny Mexican town of Santa Cecilia, where 12-year-old Miguel's abulea does two things very well: staving off music of any kind, and slinging tamales. These little packets of south-of-the-border love can be tricky and time-consuming, but make for the perfect Oscar party snack next week when we watch Coco inevitably lose the trophy to Boss Baby.

    *If you leave your pork to marinate overnight, be sure not to leave it in foil and use an enamel or glass vessel instead.

                      Whenever I go visit my family in rural Texas, we always get some homemade tamales made by a lady in the town and they are the best ones I've ever tasted! I will have to try out this recipe for myself sometime!

                                              you’re so pure and trying so hard💛 the meat is usually a lot more spicy in my family recipe! it’s got to be VERY full of chile to be warm and yummmy☺️

                                                Totally different from what we make, but still looks so good. We use mostly dried New Mexico chile soaked with garlic and boiled. Then it’s blended and put on the meat (which we slow cook and shred). We cook that for a while and then set aside. Our masa is a bit for solid and not so fluffy. This helps in the spreading. My mom mixes it with her bare hands and uses the broth from the meat instead of water. We also never tie them (but I might this year because it looks super cute). For the chili tamales we use jalapeño and cheese. Most of the time they come out so spicy (which is perfect in my house). My mom makes a chile japonés salsa which causes a huge coughing fit in the house. I can’t wait for tamales again! 🤤

                                                                Its much easier to make tamales with people who've been making them for decades(like all my family except the younger ones) and with a team of people and steam them in a big ass pot
