              To ya'll in the comments,

              They seared before sous vide so the steaks will have a controlled crust. Yeah it will not be better, but I guess it is the right call than having one judged better just because one had a better crust (kinda hard to make it equal)

                                                  Snake River Farms sells USDA choice up to Waygu A5 gold steaks that cost like $150 a piece, you mentioned nothing of the grade of the steak. They also flash freeze them from fresh cuts.
